Responsible for all aspects of managing the kitchen and
kitchen personnel, ensuring the quality preparation of all menu items and proper
handlingstorage of all food items in accordance with standards. Coordinate
the purchase of all food and maintain menus, maintaining approved food costs
and labor costs.
Looking for someone who has 5+ years in the culinary profession. Serve Safe training preferred.
Initiate and maintain excellent vendor relationships

Food safetysanitation Department of Health requirements
Regulatory compliance documentation

Productivity metrics Monitor performance of staff and ensure all procedures are completed to the department standards rectify deficiencies with respective personnel. Ensure that quality and details are being maintained.
Interview, hire, train, recommend performance evaluations, resolve problems, provide open communication and recommend discipline andor termination when appropriate.

Staff development training on food prep, method and production
Plan and direct the functions of the Food and Beverage Department to meet the daily needs of the operation.

Labor food cost control
Review sales and food cost daily resolve any discrepancies with the Controller.

Take physical inventory of specified food items for food order. Ensure the quality of products received. Ensure storeroom area is stocked and labeldated correctly.

Scheduling Develop, implement and monitor schedules.

Assist Catering department with developing special menus for functions meet with clients as requested.
Well-tuned palette- Establish and maintain predetermined profit objectives and desired standards of quality food
