Jake's Restaurant Manager

Position Summary
This position is responsible for managing all operations related to Jake’s Bar & Grille, to include planning, organizing, directing coordinating and controlling all restaurant activities and OS&E inventories; to ensure efficient operation of department; staffing, training, scheduling of employees so that they are capable of delivering a quality product which exceeds the guests expectations and hotel standards in a friendly and professional manner. Jake’s Manager is also responsible for the delivery of beverages and superlative beverage service and for the development and growth of the team, sales & profit.
Job Specific
 Maintains restaurant & bar staffing levels so as to provide for optimal performance
 Develops/approves all departmental, budgets, forecasts and schedules
 Establishes and ensures adherence to all departmental and Loews Hotels guidelines, policies and procedures
 Responsible for smooth, efficient, cost effective operation of restaurant & bar to include labor management, supervision of all aspects of service, management and control of all operating supply/equipment inventories,
 Personally supervises dining room, bar and kitchen activities to ensure quality production/delivery of product/service
 Interacts with guests frequently to ensure satisfaction and enjoyment of dining experience
 Responsible for controlling use and replacement of all operating supply/equipment inventories
 Ensures that all personnel are trained in the proper handling of high value OS&E
 Approves all department storeroom requisitions, ensures operational costs are kept within forecasted budgetary guidelines
 Reviews/maintains daily payroll report/records, maintains labor costs within established budgetary guidelines
 Conducts and coordinates ongoing training and development programs designed to provide restaurant and bar personnel with specific knowledge relating to the Jake’s story-line, thereby enhancing the guest experience
 Establish and maintain appropriate par levels and corporate mandates on all beverage and supply inventories, so as to support forecasted activity without experiencing stock-out or excessive inventory situations
 Ensures security and proper control of operating supplies/equipment for all restaurant outlets
 Communicates daily with Executive Chef or Sous Chef in charge, providing current information on reservations, large parties or VIP’s expected
 Interviews, selects, trains, appraises, coaches, counsels and disciplines departmental personnel according to Loews standards
 Follows New Hire Training and ongoing Star Service Competency program in accordance with hotel policy
 Evaluates individual employee performance, determines areas in need of improvement or requirements for advancement, establishes goals, objectives and training needs required to achieve same
 Coaches, counsels, retrains employees as needed to ensure superior levels of performance
 Attends all required hotel meetings to keep abreast of in-house activities/promotions and upcoming events and maintain effective communications with other departments in the hotel
 Conducts departmental meetings as required to communicate effectively with all restaurant personnel to ensure that they are kept current on pertinent hotel information and activities
 Evaluate changes in guest needs, the hotels guest mix and industry competitive set, to recommend appropriate product/service and operational changes necessary to ensure guest and employee satisfaction, while maintaining market dominance and exceptional financial performance
 Promote and Develop team members, supervisors and assistant managers
 Stimulate Creativity and generate new ideas to improve all aspects of the business
 May be required to work varying schedules to reflect business needs of the hotel
 Other duties as assigned

Required Skills and Experience
Qualifications
 Thorough knowledge of all matters related to the proper administration of “up-scale” food service operations to include extensive knowledge of American wines and wine service
 Highly motivated and posses extreme leadership
 Ability to solve conflict effectively

 Ability to develop and maintain effective operating and control processes designed to attain maximum operating efficiency while ensuring adherence to established guest satisfaction criteria
 Effective management, leadership, organizational and communication skills
 Ability to work flexible schedule to include late nights, weekends and holidays
 Must have a minimum of 3 years of high volume bartending experience
Education
 Associates of Science or higher degree in management, preferably Hospitality or Food Service Management.
Experience
 Five to seven years progressive management experience in hotel or free standing “quality” food service operation preferable with multi unit & beverage responsibility
License or Certificates:
 Certification as “Food Service Manager” as required by State of Florida regulations
 “TIPS” or equivalent Responsible Vendor Certification
