The Meritage Resort and Spa is seeking a highly motivated, skilled, self-determined and passionate individual with a strong commitment to outstanding service to join our team as Executive Sous Chef.

Job Summary:

Reporting to the Executive Chef, the Executive Sous Chef is responsible for assisting with the management of the department within budget, to include training and supervision of the kitchen team and ensuring procedures are consistently followed.

Essential Duties/Responsibilities:

  • Assisting with training, hiring, developing the team
  • Insuring high quality product and control to include purchasing, storage, preparation and delivery
  • Forecasting, keeping waste to a minimum and strategies to reduce spoilage and waste
  • Planning and meeting deadlines
  • Creating specials utilizing seasonal items
  • Managing equipment properly
  • Assisting with food purchasing, receiving, storage and preparation
  • Communicate with Executive Chef regularly to insure planning, staffing and internal procedures are discussed 

Job Requirements:

  • Minimum of 3 years as Sous Chef in upscale resort or Executive Sous Chef or comparable position
  • Must have extensive knowledge of Food and Beverage etiquette, guest relations and service standards
  • Must work weekends, holidays, and be flexible to work AM/PM shifts according to business demands

The ideal candidate will have:

  • Experience in overall kitchen operations, staff training, inventory, ordering and cost controls
  • Strong leadership skills
  • Ability to build morale with developing a skills culinary team to include banquets and restaurants
  • Ability to hire, supervise, and develop staff
  • Demonstrated business and budget savvy
  • Assist with creative menu designing
  • Proven and progressive track record of success
  • Upscale Chef Restaurant and Banquet experience
  • Must be able to work flexible hours including evenings, weekends, and holidays
  • Ability to coach, counsel, advise, mentor and motivate associates and managers at all levels
  • Excellent verbal and written communication skills
  • Perform additional duties as assigned

Physical Requirements:

While performing the duties of this job, the employee is frequently required to walk, sit, stand, crouch, bend, and stoop, and push and pull.  The employee is constantly required to reach and grasp.  Must be able to lift/move and exert up to 50 pounds of force occasionally.   Specific vision abilities required by this job include close and far vision, color vision, ability to adjust focus talking, smelling and hearing.  Finger dexterity is required to operate a computer keyboard, calculator and other office/IT equipment.
