•Oversee all aspects of the daily operation of their station.
•Be able to maintain and achieve standards in assigned area on kitchen.
•Maintain and monitor that their station are compiling to all sanitation regulations.
•Work with all kitchen managers and keep them informed of F&B issues as they arise.
•Strong understanding and technique in sauteing,grilling,roasting,poaching and sauces.
•To perform at a high quality of production and product.
•To be a positive influence on staff ,lead by example.
•Be able to follow direction and daily production sheet
•Understand and practice safety,sanitation and cleanliness standards in culinary department
•Ensure overall guest satisfaction.
•At least 5-6 years of progressive experience in very high quality property.
•Proficient knowledge of food and quality standards
•Strong knowledge of food preparation techniques, health department rules and regulations.
•Medium work-exerting up to 50 pounds of force occasionally,and /or 20 pounds of force frequently or constantly to lift,carry ,push,pull, or otherwise move objects.
•Must be able to effectively communicate both verbally and written,with all level of employees
•and guests in an attentive,friendly,courteous and service oriented manner.
•Attend all club required meetings and training sessions.
•Comply with all HCNY Club standards and regulations to encourage safe and efficient club operation.
